- 2 tbsp olive oil
- 1 tbsp Sea salt
- black pepper to taste
- Fresh herbs optional (thyme, rosemary)
Preheat the grill: Set your grill to medium-high heat.
Prepare the vegetables: Wash and cut the vegetables into even pieces for uniform cooking. This not only makes for a prettier presentation but also ensures each piece cooks at the same rate.
Season the vegetables: In a large bowl, toss the vegetables with olive oil, sea salt and black pepper. Grill the vegetables: Arrange the vegetables in a single layer on the grill. Grill for 10-15 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
Finish and serve: Remove the vegetables from the grill and sprinkle with an extra pinch of sea salt and fresh herbs, if desired. Serve immediately to enjoy the full flavor.
