Afghan Eggs Burrito

Add a kick to your weekend breakfast with these delicious breakfast burritos based on a traditional Afghan Egg recipe. 

Traditional Afghani Eggs

A traditional Afghan eggs recipe would be eggs baked in a tomato sauce with spring onions and seasoning. I’m not usually a fan of eggs drenched in tomato, I mean, I’m that person who keeps their scrambled egg on the opposite side of the plate to the baked beans when it comes to a full English! I decided that I would lessen the tomato element and up the egg, adding some chilli for good measure.

Egg in a burrito?

It’s quite common now to have your breakfast wrapped up in a cute, little burrito. You see it in restaurants, cafes, there are tons of recipes online; it’s really catching on. It originates from New Mexico apparently.

It’s common in Afghanistan to eat flatbread with your meal, so I thought why not use that as the bread to wrap with and give this recipe a Mexican twist! If you’ve not had breakfast in your burrito before, then this will be a good place to start since it’s only one of the breakfast elements!

The Recipe

Afghan Eggs Burrito

  • Serves: 2
  • Difficulty: Easy

A tasty weekend breakfast based on the traditional Afghan eggs recipe.

What you will need

  • 1 tbsp olive oil
  • 2 flatbreads
  • Half an onion, diced
  • 1 chilli, sliced
  • 2 medium tomatoes, diced
  • 6 eggs

Method

  • 11. Heat the oil in a frying pan and fry the onions until almost brown.
  • 22. Add the chilli and fry for 1 minute. Add the tomatoes and fry until soft.
  • 33. Beat the eggs in a bowl and add. Mix until scrambled.
  • 44. Warm your flatbreads in a frying pan –
  • 5 a minute on each side. Divide the egg mix between them and serve!
