Oh my, I think the verdict is that these salted caramel Brigadeiro truffles were a hit in my household! The colourful sprinkles were VERY attractive to my two-year old. Let’s just say, I had to hide them well!
Brigadeiro’s are a much-loved sweet in Brazil, often eaten at Birthday parties, and well, any celebration really! They are cheap to make but you’ll now find them being sold in shops known as ‘doceiras’ where they sell for a lot more!

How To Make Brigadeiro Truffles
These Brazilian truffles are super easy to make and don’t need much skill at all!
Step 1 – Firstly, you need to start by pouring the condensed milk into a small pan, a long with the sieved cocoa powder and salt. Cook it on low, stirring continuously, until the mix is thick and shiny. It shouldn’t be sticking to the pan.
Step 2 – Once thickened, remove from the heat and add the butter. Stir it in so it melts in the hot mixture. Add the vanilla extract and mix in.
Step 3 – Pour the mix into a small dish, cover and chill in the fridge until it sets.
Step 4 – Make sure you have a bowl full of the sprinkles you’ll be using ready to hand. Using a teaspoon, scoop out the mixture and roll into equal balls in your hand. Dip into the sprinkles and roll them around to coat. I used a spoon to do this. Eat straight away or chill until ready to eat.

What are brigadeiros?
Brigadeiros are small, truffle-like chocolates made from condensed milk, cocoa powder (although this can vary), butter, flavourings such as vanilla or whatever you fancy and sprinkles of various kinds.
They were invented to honour the Brazilian Brigadeir called Eduardo Gomes who was running for presidency of the republic in 1946. Brigadeiros were created in his honour and to celebrate his running for presidency. This was the first national election that women were able to vote in, so they would prepare brigadieros and sell them in support of Eduardo Gomes.
Why are my brigadeiros soft?
You need to make sure you stir the condensed milk and cocoa until thick. You must have undercooked the batter. You’ll know the batter has thickened as it will start to come away from the pan. It will not be liquid anymore. It should take about 15 minutes.
Do I need to refrigerate them?
Yes, you should store brigadeiros in the fridge once prepared. They will melt if kept out in the heat for too long. They will last in the fridge for a week.
Can I freeze them?
Yes you can freeze brigadeiros but I would do so before you shape them. It might be hard to keep their lovely, round shape once frozen and defrosted. Do the shaping after defrosting.
Can I heat brigadeiros?
No, heating them will cause them to melt!
Tips for making truffles
- Keep a wet cloth nearby when shaping as your hands will get sticky from the rolling.
- Use a spoon to help distribute the sprinkles on to the brigadeiros. It saves the sprinkles from getting stuck to your hands too!
