Belizean Garnaches

Inspired-by the traditional Belizean recipe: A crisp, fried tortilla topped with creamy refried beans, crispy kale, tangy hot salsa and salty parmesan cheese. Perfect served as a quick snack, a lunch or as a starter. Double up and make it a dinner too!

This super-quick snack, inspired by the traditional street food found in Belize, would make a great alternative to soggy sandwiches and a packet of crisps! They take no time at all to make either.

There’s a bit of a twist to this recipe as the traditional Belizean garnaches would never contain kale. It’s probably considered a sin! However this recipe is ‘inspired by’ and would never want to claim it is as good as the original.

What are Garnaches?

A Garnache is a popular street food found in Belize, usually containing a fried corn tortilla topped with retried beans, cabbage and cheese. Some also contain meat, onion, habanero peppers and tomatoes.

Recipe alternatives:

  • Feel free to serve with the more traditional cabbage instead of kale
  • You could swap out the Parmesan and go for the traditional Dutch cheese or experiment with a different cheese to make it your own
  • Why not add some shredded chicken to make it more substantial?

You will need:

A baking tray
A Saucepan
A shallow frying pan
A grill

Ingredients:

  • A handful of kale
  • 3 tbsp olive oil
  • Seasalt
  • 200g tin of refried beans
  • 2 corn tortillas
  • 50g parmesan
  • 4 tbsp salsa

The following ingredients I found ready-made at Tesco: tinned refried beans, £1.15 for 400g; Tesco hot salsa, 0.80p for 300g and Tesco corn tortillas, 8 for £1.00 – we don’t advocate waste however, so as this recipe only calls for 2 tortillas, why not make the following: For homemade tortilla chips, cut the leftover tortillas into triangles, sprinkle with olive oil and salt and bake in the oven for 5 mins until crispy.

The Recipe

Belizean Garnaches

  • Serves: 2
  • Difficulty: Easy

A crisp tortilla topped with refried beans, crispy kale, spicy salsa and tangy parmesan - perfect for a snack, lunch or as a starter.

What you will need

  • Handful of kale
  • 3 tbsp olive oil
  • Sea salt
  • 200g tin of refried beans
  • 2 corn tortillas
  • 50g grated parmesan
  • 4 tbsp of Salsa

Method

  • 1Heat the oven to 120 fan/140c. In a baking tray, mix the kale with sea salt and 1 tbsp olive oil. Bake in the pre-heated oven for 15 mins until crispy.
  • 2Meanwhile, heat the refried beans in a pan for 5 mins, ensuring you don’t boil them.
  • 3In a shallow frying pan, heat 2 tbsp olive oil and fry each tortilla one by one until puffed up and brown on the edges (about 1 min each).
  • 4Time to assemble in the following order: beans, salsa, kale, cheese. Place under a medium grill until the cheese has melted.
